材料:
150g金瓜泥


150g 糯米粉


1tbsp 澄面粉


120g 水

馅料:
120g 椰糖(切碎)

 装饰:
120g 白椰丝
1/2tsp 盐

 做法:
1)将糯米粉及澄面粉混合,过筛备用。


2)把盐加入白椰丝里蒸热,搁置一旁待用。


3)将紫金瓜皮切片,大火蒸软,趁热压成泥。


4)把糯米粉加入金瓜泥中再加入水揉至光滑粉团


5)把粉团搓成一粒粒小圆球,然后包上馅料,封口搓圆。


6)取一小锅,放入适量水,煮滚。


7)把圆粉团放进煮滚的水中,中火煮至粉团浮上水面即是熟透,捞起。



8)放入盛有白椰丝的盘中,让粉团滚上椰丝即成。





Pandan  Onde Onde (from Aunty Young Blog)


Materials:
Glutinous rice flour 150 g
Pandan juice 100 g
Brown Palm sugar 1 (about 80 grams)

white and shredded coconut 100 g + salt 1/4 teaspoon (steamed till soft)

Preparation: In a large bowl with ice and water backup

Practice:
A) Put the glutinous rice flour into a large bowl and slowly add the
     filtered pandan juice, knead the dough evenly.

2) Shape into 10 grams balls,  pack in the right amount of gula melaka shreds.

3) In a pot, add water  then bring to a boil.

    Add the balls of   kueh and cook till it float up.

    Put the hot cooked balls in the prepared  ice water.

4) Take out the balls, drain it  and roll in the white shreaded coconut.

Pandan Kueh Kosui   translated by goggle:

Pandan Kuih Kosui

Materials:
250g rice flour
45g tapioca flour
220g caster sugar
1000g pandan juice (20 pandan leaves washed )
1tsp akaline water (from Phoon Huat)

Surface:
 250g white shredded coconut (add a little salt, steam for 10 minutes)
          -buy from ntuc or sheng siong $1.20 one 250gm pkt white coconut shreds

Step by Step:

1) Stir together pandan juice, flours, sugar and akaline water in a  pot and cook until slightly thick .

2) Pour the batter into oiled small cups, about seven full.

    Can also pour into a tin oiled  rect  tray.

4) Bring water to a boil in a steamer . Put in cups or tray and steam for 25 minutes or till cooked.


5)  After steaming, remove the pandan kueh.

     Top with white shredded coconut .   Yummy.

How to make pandan Juice from the leaves ?

I try pounding the leaves in a mortar and add water then squeeze in a bag.
This method cant extract much juice.

One blogger say blend the cut up pandan leaves with water. Be careful bcos someone
damage a blender by doing this.  :D

I did a   google translate  and  here is the steamed Yam recipie in English..


Materials:
600g taro, peeled, diced (I put 700g)

4 tablespoons dried shrimp, chopped (I put 60g)

3 tablespoons preserved turnip   chopped

 1 tablespoon + 1/2 teaspoon      5 spice powder

6 tablespoons oil

Rice milk materials: (stir, filter)   B
300g rice flour
75g tapioca flour
1200ml water
1/2 tsp alkaline water

Seasoning:
1 chicken stock cube
1/2 tsp pepper
1/4  tsp salt


Decorations:

1 onion, chopped
3 red peppers, chopped
3 tablespoons fried shallots
Right amount of fried shrimp minced
And right amount saute white sesame seeds

Practice:

1) Heat oil and saute garlic, add shrimp and saute.

    Add taro, turnip, allspice and stir-fry until fragrant.

2) Add seasoning  into the rice paste mixture.
     Stir and cook until the rice milk was half cooked. Taste and adjust.

     Pour into a 22cm steaming tray and steam over high heat for
    about 45minutes to 1 hour  until cooked.

3) Remove, sprinkle with all decorative materials, and leave to cool.

4) Cut into diamond shape and serve with chili sauce.
